As a huge fan of cake, it's a terribly frustrating thing that the final size of a homebaked cake is unreasonably large for one person to eat, and with my household either watching their sugar intake, not being big fans of sweets, or abstaining dessert of Lent, baking one was not in the cards.

That was until I stumbled upon Jasma's mini cake series. She has developed several single serving cake recipes, but the matcha one caught my eye!

Matcha is one of my favorite flavors, The Great Baking Show's judges be damned. It's delightfully earthy, with a perfect balance of sweetness and slight bitterness.

What's a more perfect occasion to create a small green cake than to celebrate a small green frog's birthday! I wish I had strawberries to add in the middle and to decorate, but blueberries sufficed. This cake is perfectly decadent without being overly sweet!

Cake Batter:
  • 1 large egg
  • 40 g (3 tbsp) white granulated sugar
  • 45 g (1/4 cup) flavourless oil
  • 55 g (1/4 cup) milk
  • 55 g (1/2 cup) all purpose flour
  • 10 g (1 tbsp) cornstarch
  • 1 1/2 tsp matcha powder
  • 1/2 tsp baking powder
  • Pinch of salt
Frosting:
  • 120 g (1/2 cup) whipping cream
  • 25 g (2 tbsp) white granulated sugar
  • 1 tsp matcha powder
Tools:
  • 2 4" round cake pans
  • Parchment paper
  • Handmixer or stand mixer
  • Sifter
  • Cake leveler (optional)
  • Offset spatula (optional)
  • Piping bag and tips (optional)
Toppings: (Optional)
  • Pinch of matcha powder
  • Fresh fruit
Steps:
  1. Preheat oven to 340 degrees F.
  2. Line cake tins with parchment paper.
  3. Whisk egg and sugar together until slightly aerated.
  4. Gently mix in oil and milk to the egg and sugar mix.
  5. In a separate bowl, which AP flour, cornstarch, matcha powder, and baking powder.
  6. Sift into wet ingredients bowl.
  7. Add salt and gently fold everything together.
  8. Evenly divide the batter between the two cake tins.
  9. Bake for 25 minutes.
  10. Once baked, set on a rack to cool before icing.
  11. While the cake is cooling, make the matcha whipped icing by mixing the cream, sugar, and matcha powder. Whisk until it reaches whipped cream texture. Set aside.
  12. Once cake is completely cool, remove from pans. Level with a cake leveler or serated knife.
  13. Then, it's time to assemble. Add some of the whipped cream on one cake layer. Place the other on top.
  14. Ice the rest of the cake. Optional: Decorate using a piping bag and tip.
  15. Sift extra matcha powder on top for decoration and add fresh fruit.
  16. Chill and serve.
